How to Make Stir-fried Beef with Lemongrass and Chili
Among delicious beef dishes, stir-fried beef with lemongrass and chili is an attractive and quick stir-fry, rich in nutrients. With proper marination and suitable cooking time and temperature, the beef stays tender, moist, and flavorful.

Ingredients
- 300g beef
- 3-4 stalks lemongrass
- 1 chili pepper
- 1 spicy chili
- 200g bell peppers
- 5-6 garlic cloves, 1 small ginger root
- Seasonings: MSG, seasoning powder, salt, oyster sauce, sugar, ground pepper, fish sauce, oyster sauce

Ingredient Notes
- For stir-fried beef dishes like beef with pineapple, potatoes, mushrooms, or pickled vegetables, Cookbeo often chooses flank steak. This cut is tender, slightly fatty, and doesn't dry out during stir-frying.
- Bell peppers add a vibrant color and freshness to the stir-fry. However, if unavailable, you can simply stir-fry the beef with lemongrass and chili.
- Additionally, onions can be used to add a crunchy and refreshing texture to the stir-fry.
Instructions
Marinating the Beef
To make the beef tender and flavorful, marinate it before stir-frying. For 300g of beef, marinate with 1 teaspoon of oyster sauce, 1/2 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of MSG, and 1/2 teaspoon of ground pepper. To keep the beef tender and prevent it from releasing water when stir-frying, also add 1/2 teaspoon of sugar and 2 teaspoons of cooking oil.

Preparing Other Ingredients

Remove the tough outer layers of the lemongrass and rinse it. Crush the white part of the stalk and finely chop it. Slice the green part of the stalk diagonally into slightly longer pieces.
Chop or slice the chili into diagonal slices or thin strips, as desired. Avoid cutting the pieces too thick or large.
Crush and finely chop the garlic and ginger.
Stir-frying the Beef with Lemongrass and Chili
Heat about 3 tablespoons of cooking oil in a pan. When the oil is hot, add the chopped lemongrass, garlic, and ginger, and sauté until fragrant. Once golden and aromatic, add the marinated beef and stir-fry.

To keep the beef tender and avoid overcooking, stir-fry over high heat. Stir continuously until the beef is no longer red, then add the remaining lemongrass and chili.
Continue stirring and adjust the seasoning to taste, including MSG, oyster sauce, and a bit of fish sauce for extra aroma. Finally, sprinkle some ground pepper and stir quickly for another 1-2 seconds before turning off the heat.

The stir-fried beef with lemongrass and chili is fragrant, with the enticing aroma of lemongrass. The dish is not only flavorful but also visually appealing. The beef is tender and juicy, thanks to proper marination and cooking, without being tough or dry.
