How to Make Fried Rice with Eggs
Fried rice with eggs or egg fried rice is a legendary dish. With minimal preparation, you can have a super tasty meal, especially when paired with pickled vegetables, braised fish, or stir-fried meat. This simple recipe only takes two steps.

Ingredients
- 1 bowl of leftover rice
- 2-3 eggs
- 1 shallot
- Green onions
- Common seasonings

Prepare the ingredients
Crack the eggs into the leftover rice and mix well. If the rice has been refrigerated, it works even better as the fried rice will be firmer.

Peel and slice the shallots. Don’t slice too thinly, as the shallots can easily burn when frying.
Wash and chop the green onions finely.
Fry the rice
Add 2 tablespoons of cooking oil to a pan. Turn the heat to low and heat the oil. Then, add the sliced shallots and fry until fragrant.

Once the shallots are aromatic, add the egg-mixed rice to the pan. At this point, you may notice the eggs at the bottom cooking first and sticking slightly to the pan, with a faint raw smell, but don't worry. Keep stirring, and the rice will gradually become fluffy and crispy.

Continue to stir over medium or low heat until the rice firms up slightly, then add fish sauce and a pinch of salt and continue frying.

Fry until the rice dries out and the egg coats each grain of rice evenly. The grains should be dry, fluffy, and separate from each other. The longer you fry, the drier and firmer the rice will become. Adjust the frying time depending on whether you prefer softer or firmer rice. Before turning off the heat, stir in the chopped green onions, then turn off the heat immediately.

Transfer the fried rice to a plate and serve with any available side dishes such as pickled vegetables, stir-fried meat, or salted peanuts.
