Simple and Delicious Homemade Banana Ice Cream Recipe
This is a simple banana ice cream recipe you can make at home. It requires no complicated cooking, yet it's still delicious, creamy, and most importantly, free from ice crystals.

Ingredients
- 12-15 small bananas ~ 10 large bananas
- 2 cans coconut milk ~ 800ml
- 1 can condensed milk ~ 380g
- 2 cups sweetened yogurt
- Fresh coconut meat ~ 1/4 coconut
- 100g peanuts

Instructions
Prepare the Ingredients
Rinse the peanuts, drain them, and then roast in a pan until golden brown. Let them cool, then remove the skins and roughly crush them.

Peel the outer skin of the fresh coconut, rinse, drain, and then shred into thin strips.

Peel the bananas and slice them lengthwise into large pieces, about 0.1-0.2 cm thick.

Don't cut the bananas too early as they may turn brown. It's best to slice them after preparing the other ingredients.
Prepare 2-3 clean, dry containers with lids to store the ice cream. If you don’t have containers, you can use bags or cups.
Mix the Banana Ice Cream Base
Pour the 2 cans of coconut milk into a bowl, then add the condensed milk and yogurt according to the ingredient list. Stir well to combine the ingredients. With these quantities, the ice cream will have a moderately sweet taste. If you prefer it sweeter, you can add more condensed milk.

Additionally, if available, you can blend a small amount of banana into a smooth puree to mix with the coconut milk and condensed milk.
Assemble the Banana Ice Cream
Add 2 spoonfuls of the coconut milk mixture from the previous step into the container, ensuring you stir the mixture well before scooping to maintain an even sweetness. Then layer the banana slices on top and sprinkle with a thin layer of shredded coconut and a bit of crushed peanuts.

Finally, seal the container and place it in the freezer.

This banana ice cream is quick and simple to make, with a delicious flavor. However, it may lack a creamy texture and can develop ice crystals in the freezer.
To prevent this, after 1 hour in the freezer, take out the container, stir the mixture thoroughly, smooth the surface, then cover and return it to the freezer. Repeat this process after 30 minutes, then again after another 30 minutes, leaving the ice cream undisturbed for 4-5 hours. Stirring helps break up ice crystals, resulting in a smoother, creamier ice cream.
With just a few simple steps and easily accessible, affordable ingredients, you can make your own fragrant, super smooth, and delicious banana ice cream. Good luck with this banana ice cream recipe shared by Cookbeo!
