Ingredients
- 1 sea crab (~350g)
- 5-6 fresh shrimp
- 1.5 bundles of vermicelli
- 1/2 carrot
- 3 fresh shiitake mushrooms
- 5g wood ear mushrooms, dried shiitake mushrooms
- 3-4 shallots
- 100g bean sprouts
- 2 chicken eggs
- Green onions, cilantro
- 5-6 stalks of lemongrass

Instructions
Prepare the Crab
To clean the crab, soak it in ice water to temporarily 'stun' it, making it easier to wash off any mud or algae. Alternatively, you can lift the crab's belly flap and use the tip of a knife to pierce the two small holes near its chest to quickly kill the crab.
Once cleaned, steam the crab with a few stalks of lemongrass and optionally some beer for 20-25 minutes. For tips on steaming crab, check out this guide.


After steaming, let the crab cool slightly, then remove the meat and set it aside in a separate bowl.

Prepare the Shrimp
Clean the shrimp and remove the black vein along the back. Steam the shrimp just like the crab, then peel off the shells and remove the heads, keeping the tails for a more attractive presentation when stir-frying.

Prepare Other Ingredients
Rinse the vermicelli, then soak in warm water for 20-25 minutes. Soak just long enough for the vermicelli to soften without becoming mushy, which would cause it to stick together when stir-fried.

Soak dried wood ear mushrooms and shiitake mushrooms in warm water until they expand and soften, then rinse thoroughly and slice thinly.
If using fresh shiitake mushrooms, soak them in rice water or lightly salted water, rinse, remove the stems, and slice. If fresh shiitake mushrooms are unavailable, you can skip this step.

Peel and julienne the carrot.
Peel and finely chop the shallots.
Pick and wash the green onions and cilantro, then chop roughly.
Soak bean sprouts in salt water, rinse, and drain well.

Stir-Fry the Filling
The filling is stir-fried separately and added to the vermicelli after it's cooked to ensure the dish is flavorful and the ingredients remain crisp without becoming mushy.



Season with 1 tablespoon of fish sauce and 1 teaspoon of MSG, stir well, then remove from heat.

Stir-Fry the Vermicelli
After soaking, drain the vermicelli and cut it into shorter lengths. Place it in a bowl and mix with 2 beaten eggs.



At this step, you can sprinkle a little water over the vermicelli to prevent it from drying out.

Season to taste with fish sauce, oyster sauce, and MSG.
