Sweet and Refreshing Loofah Sauteed with Mushrooms
Loofah sauteed with mushrooms has a sweet aroma from the loofah, and delicate flavors from the mushrooms. This is a delicious sauteed dish that is light and refreshing, perfect for hot summer days.

Ingredients
- 400g of Loofah ~ 3-4 fruits
- 500g of various mushrooms
- 3-4 dry onions
- Green onions
- Seasonings: Oyster sauce, flavor enhancer, fish sauce, ground pepper

Preparation

Cut the base of the mushrooms, soak in salt water for 2-3 minutes, rinse thoroughly, and let them drain. Slice thinly or cut into small pieces depending on the type of mushroom.

Peel the loofah, cut off the ends, and rinse clean. Cut in half and slice into diagonal pieces about 1.5cm thick.
Peel the onions and slice thinly.
Cut the green onions into approximately 2cm long segments.
Cooking Process

Add 2 tablespoons of cooking oil to a pan. Once the oil is hot, add the onions and sauté until fragrant. Next, add the mushrooms as they need more time to cook than the loofah. When the mushrooms are well coated with oil, season with some flavor enhancer or broth mix for a deeper taste. Sauté the mushrooms for about 3 minutes on high heat to avoid excess water.

Then add the loofah, stirring well. Season to taste with oyster sauce, flavor enhancer, fish sauce. Continue to sauté for about 2 more minutes until both mushrooms and loofah are cooked.

Finally, add the green onions, stir quickly for 5-6 seconds then turn off the heat.

Loofah sauteed with mushrooms is very aromatic, the loofah is subtly sweet, and the mushrooms are refreshing. This is a light and easy-to-eat stir-fried dish that is great for preventing feeling full. Occasionally, the family meal should have such vegetarian stir-fried dishes to enjoy, it's quite interesting.
