Secrets to a Crisp, Beautiful Beef Stir-Fry with Broccoli with Moist Beef
Beef Stir-Fry with Broccoli is simple to prepare, yet delicious and nutritious. If done right, this stir-fry dish will be a visually appealing addition to your feast, party, or guest dinner.

Ingredients
- 400g green, white broccoli
- 90g carrot
- 200g beef
- 4-5 garlic cloves, 1 ginger
- Green onion
- Salt
- Seasoning: Oyster sauce, fish sauce, seasoning powder, MSG, sugar, ground pepper

After thinly slicing the beef, marinate it with a little seasoning to make it tender and flavorful. For 200 grams of beef, marinate with:
- 1 teaspoon of seasoning powder
- 1 teaspoon of sugar
- 1 teaspoon of oyster sauce
- 1 tablespoon of cooking oil
The cooking oil and sugar will help to mellow the beef flavor, make it tender, and prevent excessive liquid during stir-frying, which can dry out the meat.

Soak the broccoli (also known as cauliflower) in salt water, then separate into small florets and cut into bite-size pieces. Trim the outer layer of the broccoli stem to get rid of its tough texture and cut it into small pieces.
Green broccoli is tougher than white broccoli, so remember to peel off the fibrous skin when trimming each floret.
Peel the carrot, you can either cut it into strands or carve into flowers, then slice it into thin pieces about 0.1cm thick.
To keep the broccoli crunchy and avoid it becoming tough from overcooking, or undercooking due to hurried stir-frying, you should blanch it in boiling water.

Blanch the broccoli and carrot in boiling water for about 40-50 seconds, then drain, rinse with cold water and let it dry. Doing this ensures the broccoli is partially cooked, can be stir-fried quickly and retains its crisp sweetness. Especially, the color of the broccoli will be very green and vibrant.
Once dry, season the broccoli with 1 teaspoon of seasoning powder for a richer flavor.

How to Stir-fry Beef with Broccoli
Add some cooking oil to the pan, add ginger and half of the minced garlic and sauté until fragrant, then add the beef and stir-fry. Stir-fry the beef over high heat until it's medium-rare and then transfer to a separate plate.



Stir-fry the broccoli over high heat until it's crispy and green. Stir quickly until the broccoli is evenly coated with oil, then add about 2 teaspoons of oyster sauce and a little bit of MSG.
Stir-fry for about 40 more seconds. Since the broccoli has already been blanched, quick stir-frying over high heat will make it tender and crispy. If you prefer softer broccoli, stir-fry it longer over low heat.

After 40 seconds, add the beef back in, stir well, add the green onions, season with fish sauce, sprinkle with some ground pepper to taste and enhance the dish's aroma. Stir quickly for 5-6 seconds then turn off the heat.

The broccoli should be cooked just right to be crunchy. Overcooking will make it mushy.
