How to Make Stir-fried Pork with Lemongrass and Chili
By combining pork with lemongrass, spicy chili, and a few slices of red and green bell peppers, you can prepare a delicious and flavorful stir-fried pork with lemongrass and chili in just 20 minutes.

Ingredients
- 350g pork
- 3-4 lemongrass stalks
- 1-2 spicy chili peppers or horn chili
- 1/4 red bell pepper
- 1/4 green bell pepper
- 2 shallots
- 2 garlic cloves
- Coarse salt
- Seasonings: oyster sauce, fish sauce, MSG, ground pepper

Instructions
Prepare the Pork
Rub the pork with coarse salt, rinse clean, and let it drain. Then, slice the pork into pieces about half a centimeter thick.
Marinate the pork with 1 teaspoon of fish sauce and 1/2 teaspoon of ground pepper. Mix well and let it sit for about 10 minutes to absorb the flavors.

For a delicious stir-fried pork with lemongrass and chili, you can choose cuts like pork jowl or tender pork shoulder.
Prepare the Other Ingredients
Peel off the tough outer layers of the lemongrass, cut off the base and the top, and wash it. Crush the bottom part of the lemongrass and mince it. Slice the rest of the lemongrass diagonally into long pieces.
Wash the chili peppers and slice them diagonally.
Wash the bell peppers and cut them into matchstick-sized pieces, similar in size to the pork slices.
Peel and mince the shallots and garlic.

Heat 2 tablespoons of cooking oil in a pan. Once the oil is hot, add the minced shallots, garlic, and lemongrass, and sauté until fragrant. Then, add the pork and stir well.

Continue stirring until the pork is cooked through and begins to firm up, then add the bell peppers. After 1 minute, add the sliced lemongrass and chili peppers. Season to taste with oyster sauce, MSG, and a little fish sauce to enhance the aroma.

To give the dish a vibrant red-orange color, you can add 1/2 tablespoon of annatto oil and a little chili powder. If you don't like too much heat, use non-spicy Korean chili powder instead.
