How to Make Vietnamese Crispy Roast Pork
How to make crispy roast pork using an air fryer. The pork belly has a golden, crispy skin that crackles perfectly, with tender and juicy meat inside, just as good as what you’d get at a restaurant.

Ingredients
- 400g pork belly
- Coarse salt
- Aluminum foil
- Seasonings: fish sauce, oyster sauce, sugar, ground pepper, vinegar

Instructions
Marinate the Pork Belly
After boiling the pork, take it out and use a fork or sharp skewer to poke small holes all over the skin.

Mix 1/4 tablespoon of coarse salt with 1/2 tablespoon of vinegar, stirring until the salt dissolves. Brush this mixture over the skin several times.

Flip the pork over and score the meat side lightly. Marinate the meat with 1/2 tablespoon of fish sauce, 1/2 tablespoon of oyster sauce, 1/2 tablespoon of sugar, and 1/2 tablespoon of ground pepper.

You can adjust the seasoning to your taste, adding five-spice powder or star anise if desired.
After marinating, refrigerate the pork for 20-30 minutes to allow the flavors to develop and the surface to dry out slightly.
How to Make Crispy Roast Pork in an Air Fryer
Prepare aluminum foil, which is commonly sold for grilling and frying. Lay out the foil, place the pork belly on it with the skin side up, and wrap the meat tightly, leaving only the skin exposed.

Brush the vinegar and salt mixture over the pork skin a few more times, then sprinkle a thick layer of salt (about 0.2 cm thick) on top. Place the pork in the air fryer and set the temperature to 180°C (356°F) for 25 minutes. The salt layer helps absorb moisture from the skin, making it dry out faster.

After 25 minutes, remove the pork and scrape off the salt layer, but keep the foil wrap. Brush the vinegar and salt mixture over the skin 2-3 more times, then return the pork to the air fryer. This time, increase the temperature to 200°C (392°F) and cook for an additional 15 minutes.
